Going to the grocery has been a little disappointing during our “Safe at Home” time. Brisket prices have been sky high and pork has been scarce. There’s been plenty of fish and chicken, but that gets boring after awhile. We decided it was time to break out the BBQ archives and try some new recipes. We cooked our very own whole gator! Believe it or not, you can have one shipped to your front door. It arrived measuring 4 feet long and weighing in at 19 lbs. The skin was already removed, so we aren’t sporting new gator boots (yet). We slow smoked it (about 10 hours) with a little dusting of our BBQ Rub, and served it with a side of Crawfish Cornbread Stuffing. (Thanks for the recipe Rusty!) Due to social distancing, we were only able to have a few friends and family members over. We ate like Cajun Kings and enjoyed a great meal and even better conversation.
